Everywhere we go, our hearts crave one thing: coffee. Being Filipino means loving coffee even in the country’s scorching weather. But what if there’s a café made for that? Sol Café, owned by Edsel Santiago, is a refreshing pop-up cart designed to satisfy both coffee and non-coffee lovers.

Started as a home-based coffee shop in Greenhills with only six basic flavors, Sol Coffee Cart/Café has grown into a pop-up café offering more than 20 drinks across three categories: coffee, non-coffee, and frappes. It opened on June 7, 2024, and has grown significantly in just two years. “Sol,” meaning sun in Spanish, embodies the coffee cart’s vision of radiating energy through its drinks.

This café is not your typical coffee shop but a minimalist yet premium pop-up cart that can cater to a variety of events, such as weddings, birthdays, christenings, brand events, conferences, launches, concerts, etc.

Sol Café has also been featured in various brand collaborations, events, and productions, including the sets of Ang Mutya ng Section E, Seducing Drake Palma, and Minamahal; GMA Network’s All Out Sundays, Unang Hirit, and TVJ; ABS-CBN’s IWant, Star Music, and Star Cinema, as well as brands like Happy Skin, BLK Cosmetics, Mossimo, Power Mac, Penshoppe, Samsung, and more. Several stars and influencers have also been seen enjoying its drinks, including Jillian Ward, Denise Laurel, Ashley Ortega, Perey Lierge, AZ Martinez, Will Ashley, Sofia Pablo, Ashley Sarmiento, Ashtine Olviga, Dylan Menor, Angela Muji, Andres Muhlach, Janine Tenoso, Cup of Joe, The Juans, and many more.

According to its owner, Edsel Santiago, the pop-up café’s collaboration is her way to support local artists and productions. She stated that being part of different creative projects is very fulfilling for her.

She also stated that if there is one flavor she can recommend to the café’s future customers, it is the Spanish latte, which can capture everyone’s hearts, as it is Sol Café’s best-selling drink. 

With the recent collaboration of PIPOL mgZn with Cornerstone Entertainment featuring P-pop groups, Sol Café was also seen on set, with drinks available for artists and the production team as well.
